While the baby sleeps

It has been quite awhile since i have posted and i have been just itching ( literally i have a rash) to post lately. I am going to to type as fast as i can while Copelan sleeps. Who is Copelan!? Oh yes i have given birth to our beautiful baby boy since the last time i posted. He is almost 2 months old now. This is him the day he was born. I fell in love with him right away..

 After almost 2 months our life has been changed.  So much is different now and i am still trying to figure out a rhythm but its getting a little easier. Some days are harder than others though and I know the title of my blog is now more true than ever. Our life is crazy and beautiful and full of adventure.
 I find myself not having enough time in the day to get things done but also getting a ton of things done if that makes any sense. When he is sleeping I cram so much into that little time its crazy and the to do list in my head is slightly overwhelming. work, dishes, laundry, he needs a bath, i need a shower, exercise, spend some quiet time with the Lord, get dinner ready and so on....unfortunately the last 2 days i have neglected to exercise..How am I going to get back into my jeans if I don't exercise!!?? This is the thought that goes through my head all day..( my husband does help alot but being home all day i try to get a lot of these things done)
   I am learning to breath..what is important? As a new mom all of the things on my to do list seem so important and overwhelming if i don't do them but as a new mom I also know that i will go crazy if I don't sit and eat and spend time in the word. Its has been hard to figure this out and frankly some days i have to make myself get off the couch and get things done otherwise i will feel blah all day.
  God wants us to breath and to feel joy. I want to enjoy life, to enjoy my little family that God has blessed me with. 1 Thesalonians 5:16-18 says to rejoice always! pray without ceasing and give thanks in all circumstances,
Rejoice God has done good things in your life and is continuing to do things in you that you can't even see...
Psalm 62&63 talk about how God is our rock and our refuge and how we need to trust in him. They talk about waiting on God. Please read these two chapters for yourself.
Everyday is new and filled with new obstacles and things to get through but everyday is also filled with new joys and new things to laugh about.
I absolutely love being a mom and I love what God is doing in me and Josh as parents, as individuals and as husband and wife. Life is not easy but God is our rock than we can stand on. He will uphold us and give us what we need.
I have realized then when i put God first and spend time with him everything else will fall in place and work out. I will have a nice dinner made to eat with Josh, some laundry done ( not folded) no exercise but I ate breakfast and lunch :)  I will be satisfied and live everyday asking God to give me strength and with him I have the joy and peace I need to be a wife and a mom.

waiting

So even though it has been over a year since I have blogged the title of my blog is definitely still true. Our life is still very crazy and very beautiful.  A lot has happened since March 2014 and obviously I cant recall everything little or even big thing. The biggest thing that has happened in out life though i can recall and will tell you about this wonderful big thing. 
Me and Josh had been trying to get pregnant for about 2 years.  In this time of trying and waiting we prayed and trusted in God ( although it wasn't always easy) We changed our lifestyle by eating better, and using all natural and homemade cleaning and beauty products.  Obviously that alone was into the answer but we felt like that was what we were supposed to do and I believe it did help us in many ways. We went through many ups and downs throughout this time and we leaned on God and on each other. We knew God had a plan and we trusted in his plan and in his timing ( again not easy to do)

 In November of 2014 we had decided to just relax about not worry and just chill about the whole trying to get pregnant for awhile. So we did..our mind was set it will happen when it happens no more stressing and worrying God its in your hands!! Towards the end of December I was feeling extremely tired and I was like there is something wrong with me and Josh said I think your pregnant. Because of having false alarms many times before we waited over a week to actually take a test. POSITIVE!!! :) :) We couldn't believe it! Since then time has literally flown by so quick..I am now 7 months pregnant and we are trying to get everything ready and trying to pace ourselves. There is a giant ministry to do list and a giant  home to do list but we are getting things done and trusting in God to help us achieve it all.

For those of you who are waiting on something or overwhelmed remember God is on your side..Seriously he is! Our lives are so busy and can be so overwhelming but God is here.  Wait on him ask him to give you wisdom and peace, make a to do list and pace yourself.  God didn't create us to be overwhelmed and stressed he created us to have peace and Joy. So today if you are not feeling any peace or joy sit with the lord talk to him sing some worship songs and just rest in him ( Even if its just for 5 min) find your rest in him today.

Lets be honest

Lets be honest we all say things that we don't do because we are busy and we forget or don't have time.  Lets be honest we all make goals that we don't always achieve.  Lets be honest life is busy.  So let me be honest stop making goals/plans that are  unrealistic at the time.. Sometimes we have to work up to things.  We don't wake up one day and decide we are going to go for a 2 mile run if we don't normally run we have to gradually work our way up.
 So I said I was going to do a photo challenge and blog everyday, but lets be honest that obviously didn't work.  Me getting up early enough to blog is unrealistic or coming home straight from work when I am only home for an hour and blogging is unrealistic.  From now on I will blog when I have time. :)
I promised you all some recipes last time I blogged so I will give them to you in this post.
Chocolate coconut granola bars.
1/2 cup peanut butter
1/3 cup honey
1/4 cup butter
1/4 cup flaxseed ( I use a tad more)
1 cup oats
1/2 cup shredded coconut
1/2 cup chocolate chips
Directions: Line a pan with foil
Melt your P.B, Butter, and honey low on heat ( I have also used agave) stir constantly and when melted move from heat
pour in your oats and flaxseed and stir
stir in coconut and chocolate chips.
Pour into foil lined pan and press into pan and let set in the fridge. Once firm cut into bars. 
* Anyone is bound to love these bars.  Delicious and taste like candy :)
 
Peanut butter or almond butter:  put as many nuts in your processor as desired and turn on and gradually pour in olive oil until it is to the consistency that you like. :) If you are used to store bought it may taste different but I think homemade is super delicious. For chocolate just add some unsweetened cocoa powder.
I also have been making salads in jars this past week and they are awesome! I just take the jar and leave the house and before I eat it I shake it and pour it in a bowl. taste amazing!
Here is what I do
Salad in a jar:
dressing on bottom
next anything juicy so I do the tomatoes
cucumbers
green peppers
mushrooms
spinach
lettuce

Well I think that is all I have time for tonight because lets be honest there are some more things I want/need to get done.  Usually Sunday nights/Mondays are my make ahead meals and lunches and breakfasts for the week.

Photo challenge day 2 -

Well today's post goes to coffee, mainly my morning coffee.  I am in no way addicted to coffee. I can go days without coffee if I choose to and some days I do.  Last night though I did not sleep well which is why I woke up late today.  This post will be short...:) I love my sleep so its hard to drag myself out of bed so on mornings like these coffee comes next.  I love the taste of coffee so I don't mind drinking It black.  Sometimes I like creamer as a treat :)
Well now that I am a bit more awake now its time for a few minutes of yoga and some bible time.  Have a blessed day! :)

photo a day challenge

I recently saw a blog where a lady posted a photo or two a day in her blog.  I love this idea! I don't blog enough although I love it.  I thought this would be fun! So here's to day 1.  Today's photos go to homemaking/being a wife :)
Today I have had lots of coffee!!!  some days are just coffee days..I am sure you know what I mean :)
Today I made a batch of granola bars, muffins, peanut butter and chocolate almond butter.  yes it was a bit time consuming and my back hurts but it feels awesome to know we are saving money and we are being healthier.  I know what are in the things I make so it kind of supersedes the way I feel when I'm done because healthier is better. :) Muffins are what Josh eats for breakfast throughout the week at work. I make chocolate muffins for me :)  We both eat these delicious granola bars for breakfast or a snack.

2014- exciting

Well It is 8 days into the New year and so far it has been quite an exciting one.  From sickness and freezing weather we make the best of what life hands us. :) My husband was the one who used the phrase  "exciting" last night, and I said you call being sick and all this craziness exciting!?  I guess it was not fun exciting but different exciting.  We have not had to go through any of this yet in our almost 3 years of marriage. I would say we handled it quite well.  We slept downstairs for 2 nights that is what I would like to call a sleepover. :) Things are finally going back to normal today.  He went back to work, we have church tonight, I am feeling better so making a delicious nice dinner for us tonight. 
 I have thoroughly enjoyed this day.  I could have gone into the office to work but seeing as how I am still recovering from being sick I stayed home cleaned up the house and have had a wonderful relaxing day of coffee, bible reading and worshipping :) Every day is a new day and in this new year I want to take every day's craziness and make it exciting.  We are blessed to have the life we have although it may not always turn out the way we think. God's plans are better than ours! I am glad that we can find the "exciting" on the crazy days.  :)

decisions that count

Well It has been quite awhile since I have posted. I have been rather busy, and I honestly have not had a day like this in a long time. I woke up and read a really good book I got from the library last night. http://www.goodreads.com/book/show/8927997-between-two-ends

 Anyway This morning I have done some extensive research of the anti-inflammatory diet, and honestly I do pretty good, but I am going to have to get stricter I decided. I told I have a condition called Costocondritis which is inflammation in the ribs. So this week it has been particularly bad. There is not anything I can take for it, but like my back I just have to take it easy. But I know that I may be able to help the pain with the foods I eat.  Waking up in pain this morning I decided I am going to research and do what I can. That's all we can do right!? and trust in God and not worry which can be hard to do, but I know God has it all under control but I need to do my part as well.
 Me and my husband have actually done a very good job at eating healthy and clean we both have some health issues and decided awhile ago to cut some definite things out. So for me here I go again..and it may be a never ending journey of eliminating things and figuring out what does and doesn't work. I am up for it though!
 So I decided no more putting it off today I will start  with baby steps to cut some things out of my diet and my more things in it that are ant inflammatory foods :) So to start off I made an omelet with kale and veggie cheese ( sounds gross but is actually good and pretty cheap at Wal mart) and some raspberries and blackberries. it was delicious !:)
 So after I do some housework I am going to head to the library to find some cook books/nutrition books to learn more about what I can do :) I pray that God gives us all wisdom on how we are to treat our bodies and the foods we put in them.
